A single evening is built over the best part of a week, not an afternoon. Sauces, cures and slow cooks are underway long before I arrive, because they cannot be hurried

Dates are held on a first-come basis and are not blocked out in the calendar until the deposit is received. The deposit is non-refundable, with the balance settled on the evening itself
